GF Thanksgiving stuffing to make your heart dance

Hi there, friends. I was sitting here with writers’ block, wondering what fantastic insights and inspiration I could share for my first blog post. Hubby suggested I share one of my favorite turkey day recipes, adapted to be Gluten Free. Will it make your heart dance? You will need to be the judge of that. But for us, it’s so much better than any traditional stuffing.

This one comes from one of my tried-and-true cookbooks, The Great American Favorite Brand Name Cookbook. Actually, this wasn’t even originally my cookbook, I inherited it from my first husband, who died in 2003. He was a hobby chef, and this was cookbook was one if his favorites. He first made this recipe for me, so by making it we carry on his tradition.

I am not one to ramble on, so let’s get to it. Here is the recipe:

Orange Corn Bread (you can use this recipe or use your own and just add the orange zest): Preheat oven to 400* F. Combine 1 1/2 cups Gluten free flour (I prefer Namaste or Pamelas), 2 T sugar, 4 t baking powder, and 1/2 t salt in a medium bowl. Stir in 1 cup milk (buttermilk makes it even more flavorful), 1 beaten egg, 1/3 c vegetable oil and 2 t finely shredded orange zest until just blended. Pour into greased 9×9 square baking pan for 20 to 25 mins or until toothpick comes out clean. Let the cornbread cool complete, crumble and set aside.

Stuffing: Cook 8 oz of country sausage, 1 c chopped onion, 1/2 c chopped green pepper, 1/2 c chopped celery in skillet until meat is browned and veggies are tender. Drain thoroughly. Combine sausage mixture, 2 beaten eggs, 1 t dried thyme, 1/2 t salt in large bowl. Add corn bread and toss to mix. Add enough (1 c to 1 1/4 c) turkey or chicken broth to moisten and toss to mix. Place in a greased 2 1/2 q covered casserole dish. Back for 1 hour or until hot. Makes 10-12 servings.
